Perhaps what’s most incredible about Yurosek’s crunchy creation is that it turned what was once a disposable waste product into an indispensable commodity. Prior to his innovation, up to 70% of a given carrot harvest would never make it to supermarket shelves, simply because they didn’t look like ideal specimens. Yurosek’s genius was finding a simple way to give value to this byproduct, transforming the unfortunate American habit of throwing away ugly food, into an industry.
